By popular demand, here is the recipe for the oatmeal whole wheat flax raisin cookies I made last night. I cobbled it together from several different recipes and will continue to tweak it as I make it more. There aren't any pics b/c I didn't think anyone would be interested. Use your imagination - they are brown and lumpy, which brings me to:
Warnings:
1. They are healthy because they are chock full o' fiber. Without being excessively descriptive, I'll just tell you to go easy on them and not eat too many. (For those of you who are "Pointy," they a 1pt each)
2. They don't taste the same as "Regular" oatmeal raisin cookies because they have a lot less sugar and butter and no white flour, but I really like the flavor. They have the 2-year old's seal of approval as well. (She had a bedtime snack of one these cookies and a tall glass of goat's milk. Who has two thumbs and is a big ol hippie? This gal! *points thumbs at self*)
3/4 cup butter (I use SmartBalance)
1/2 cup sugar
1/2 cup brown sugar
1 1/2 cups flax seed (grind it up in your coffee grinder)
2 eggies (I use EggBeaters, b/c we do low cholesterol stuff around here)
1 tsp vanilla
1 3/4 cups whole wheat flour
1 tsp baking soda
1 1/2 cups oats
3/4 cup raisins
(Also put in cranberries or nuts or whatever you like)
Use a melon baller to scoop out little balls of oatey goodness, then use your finger or the back of a buttered spoon to smush them down as flat as possible (if you are like me and prefer crispiness)
Then pop em in your prepared 350 degree oven and bakey bakey for 15 minutes or so.
would it work if I left out the flax seed but put in all the rest??? Re's mom or mamaw

You'd need to up the butter and maybe add an egg. The flax is a substitute for both of those.
